ACS/FDA Colloquium Series

The first ACS/FDA colloquium was held on Tuesday June 4 from 9:00 AM - 12:00 PM at the Wiley Building auditorium in College Park, MD. The colloquium focused on taste perception in humans and its impact on nutrient intake and on recent advances in food flavors including the discovery of new flavors. Presentations were followed by a panel discussion.

Meet the Experts

Paul Breslin

Paul Breslin, Rutgers
Paul Breslin is Professor of Nutritional Sciences at Rutgers. The primary focus of his work is on taste perception with an emphasis on taste discrimination, taste enhancement and suppression, and taste localization.

Devin Peterson

Devin Peterson, Ohio State

Devin Peterson is a Professor in the Department of Food Science and Technology at The Ohio State University. Dr. Peterson’s research efforts focus on food flavor and related chemistry, with emphasis on identification of flavor stimuli (taste, aroma, chemesthetic, mouthfeel), pathways of formation/degradation, taste/aroma modulation, and mechanisms of delivery.

Guy Servant

Guy Servant, Firmenich

Guy Servant is the Vice President of Biology at Firmenich. Since 2016, he has led the overall biology research effort at the company with a focus on the discovery of new flavors, flavor modulators and natural high intensity sweeteners.

The US FDA Center for Food Safety and Applied Nutrition (CFSAN) and the American Chemical Society (ACS) have formed a partnership to provide a chemistry colloquium series to be held at College Park, MD. The colloquium series will be focused on high-quality, cutting-edge chemistry related to food, food additives, food packaging, and food safety topics. These sessions will be held in College Park, MD and are available to FDA employees, ACS members, and the public to attend in person or via webcast.  Discussion of regulatory issues are outside the scope of the colloquium series.
